Vitamins A, C and E and the minerals Copper, Zinc and Selenium all have key anti-oxidant roles within our bodies. When oxidation occurs, incomplete free radicals take a hydrogen ion from a nearby molecule, this in turn grabs one from another structure setting off a chain reaction that messes with the bodies defence systems and can lead to cell and tissue damage, i.e. cancers, ageing, skin and other stresses.
Antioxidants help prevent this process by either returning a hydrogen ion to an affected molecule, or by simply mopping up and destroying free radicals. Therefore aim to eat foods high in these vits and minerals. Good sources are carrots, broccoli, oranges, strawberries, nuts including brazil nuts and walnuts, and dairy.
